Large non-stick fry pan
A clean dish towel or paper towels
1 cup snow peas ( chopped into matchstix)
1 cup leeks ( I used bok choy ) (chopped into matchstix)
1 red bell pepper ( chopped into matchstix)
1 pound of hard / firm tofu
Light soy sauce
Step 1. Slice the tofu into 16 strips..( 1 oz per strip) and place them in between dish towels , then put a baking sheet on top. Place two large canned items on top of sheet. This presses the excess moisture out ofthe tofu... let it sit for 10 to 20 mins, till tofu is not sloppy wet.
Step 2. Put a tablespoon of Canola Oil in the fry pan and get it hot! While it's heating up, spread sesame seeds on a plate, take each tofu strip and coat it with sesame seeds. When strip is coated , place it into the hot oil to fry.
Step 3. Flip the tofu strips when the sesame seeds on the bottom get brown.
Step 4. Take out the tofu strips when done and place them on a serving plate.
Step 5. Add in another table spoon or so of canola oil, then add in the leeks ( or the bok choy ), Stir fry them for about 60 - 90 seconds.
Step 6. Ad in the snow peas and the red peppers. Stir fry everything for another 2-3 miniutes.
Step 7. Combine 1 tablespoon of sherry, one table spoon of light soy sauce, and about 1/8 teaspoon of sugar substitute in a seperate bowl.
Step 8. Pour sauce bowl contents into veggies and stir sry the mix for another 2-3 mioniutes. The pour entire fry pan contents over the tofu...
SERVES 4 portions at 9 grams of carb per serving.
